The seeds tastes like maple syrup mixed with brown sugar used to make tea, and the leaves are eaten by cultures around the world medicinally, although I am not making any recommendations or claims, it tastes like salad greens or celery.  For an added treat, harvesting seeds will smell like bit o' honey.
